Flourless, yet flawless

My science fair "Flourless, but flawless" asks what gluten free flour makes the best GF cookie? People in my family are allergic to gluten so they can't eat stuff with flour. This made me think how can I make cookies gluten free, and which gluten free flour would make the best cookie. Overall the best cookie is based on preference, if you want a thiner cookie you would want the alomand flour, if want a more textured cookie you would want the oat flour cookie, and if you would want a thicker cookie you might want the rice or all-purpose gluten free flour cookie. My project is important because it helps people with allergies find alternatives for food or ingredients.
