PRODUCING TOFU FROM PERUANO BEANS AS A SOY- FREE ALTERNATIVE

This project investigated whether tofu can be produced using Peruano beans as an alternative to traditional soybeans. An experimental procedure was conducted to produce tofu from Peruano beans and compare its texture, appearance, and yield to standard tofu. The results showed that Peruano beans can successfully form a tofu-like product. This study demonstrates an innovative use of an underutilized legume and supports the development of sustainable, plant-based protein alternatives. The findings may help expand affordable and accessible food options in regions with limited soybean availability.

  1. I think this is a great project. In order to strengthen your results in the future, you can measure it by testing if study participants can tell the difference between Peruano bean tofu and regular tofu during a blind taste test. Great job with the presentation, graph and creativity.
